Lilium, twenty years of Canarian cooking rethought: the Repsol Sun on Arrecife's marina

In 2006 it was a gastrobar in Tías. Twenty years on, Lilium is one of five Lanzarote restaurants with a Repsol Sun, awarded in the 2026 guide, and has featured in the Michelin Guide since 2012. Since 2014 it has been at Marina Lanzarote in Arrecife, looking out over the boats.
It is run by Orlando Ortega, born in Arrecife and trained in kitchens such as El Bulli alongside Ferran Adrià, and Sandra Guadalupe. For twenty years they have stubbornly done one thing: take the recipes Canarian families carry in their heads and rewrite them with modern technique, without betraying them.
What to order
The cone of kid goat pâté with palm-honey caviar, squid on sweet-potato cream, the reworked caldo de millo, coastal noodles with carabineros, black pork. Bread comes with gofio and tomato butters — a statement of intent in itself. The cellar leans on island wines.
